What could be more perfect on a hot summer night than a Margarita? I’ll tell you: a watermelon Margarita! We’re basically just taking two things that you should already be consuming in July and mashing them together into something even better. Add in some spicy ginger-lime syrup and you’ve got yourself a seriously delicious Ginger Watermelon Margarita. – Andrew
Ginger Watermelon Margarita
2 oz Tequila
1 oz Lime Juice
3/4 oz Ginger Lime Syrup
Watermelon Ice
First, juice a watermelon, then freeze some of the juice into cubes. Then, combine the Tequila, juice, and syrup with 3-4 watermelon ice cubes (we used 4 one-inch square cubes). Shake well and strain into a chilled coupe glass – or, better yet, pour everything, cubes and all, into a lowball glass. Enjoy!
Adding in fruit juice to a drink like the Margarita, with its careful balance of sweet, sour, and earthy Tequila, can be tricky. Extra juice – especially a watery juice like watermelon – can throw off the balance by watering down the drink. So we solve that problem by taking water ice out of the equation entirely, and using the juice as the ice, adding flavor without diluting everything too much. It’s a fun trick that works really well for adding extra flavor to lots of shaken drinks without any extra watering down of your drinks.
The result is a Margarita with a bit of extra sweetness, an earthy, fruity sweetness, and a tremendous freshness. Melon and Tequila are great friends, in the same way that you might match bourbon with mint or Scotch with pineapple. They bring out the earthiness in each other, but never in a way that makes them feel heavy or dark. We also added in some Royal Rose Ginger Lime simply syrup, adding a nice spicy sharpness that balances the sweetness of the watermelon very nicely.
